Originally from Nathalia, he first started working in a butcher’s shop at the age of 12 and has been in the industry ever since.
“I was always interested in butchering; my grandfather was a butcher,” he said.
“It’s something I’ve always wanted to do.”
Mr Bourke’s business, Shepparton Family Butchers, was one of several local businesses to take out honours at the recent Australian Meat Industry Council Victorian Meat Excellence Awards.
It achieved a perfect score in the Gourmet Sausage Open Category for its Vegemite and cheese sausage.

It also won two golds, three silvers and three bronze.
Among other local winners were Shepparton’s Brad’s Magic Meats, which took out seven gold medals, and Fitzgerald’s Farm Fresh Meats in Kyabram, which took out one gold, nine silvers and one bronze.
Mr Bourke said he was honoured his business, which he had operated since 2012, was among those recognised.
“It just goes to show a lot of your hard work is getting somewhere,” he said.
Mr Bourke said he was passionate about the meat industry because of its ability to bring families together.
He believes what sets him apart from his competitors is the “care that goes into crafting the product”.
“We do our best to make sure everything’s on point all the time,” he said.

Mr Bourke also prides himself on good customer service, which he says “keeps the customer coming back”.
He said the “most satisfying bit” of his job was when customers had something good to say about the products they had bought.
Mr Bourke added that winning the award would not have been possible without his team.
“We rely on every staff member we’ve got,” he said.
