Mrs Gillespie has perfected her recipe for most of her life and has tested batches of the delightful treats on her husband Dean and fellow Tocumwal Fire and Rescue volunteers.
After dinner on Thursday, Mrs Gillespie and her daughter Sarah took their dog for a walk to bring the NSW Police a box of cookies.
Much to their surprise, the box was accepted.
Her intention was simply to leave a good taste of Tocumwal in their mouths.
“This situation the police are in is a once in a lifetime and I want them to remember Tocumwal fondly despite the long hours they must be working,” Mrs Gillespie said.
“I live near the bridge in Tocumwal, it's been so cold and I'm sure many of them have had to travel quite a long way to be there and help keep us safe.
“I wasn't sure if they'd be allowed to take anything but I was glad they did.
“They were so grateful that someone was bringing them something, they were very excited and didn't expect anything.”
Despite numerous attempts from the volunteer firefighters to get the recipe, Mrs Gillespie keeps it close to her chest.
“They (Tocumwal F&R volunteers) seem to really love them and are asking for my recipe all the time which of course I refuse to give them,” she said with a laugh.
“They never know when they will have to get up at 3am and having a cookie at that time helps.
“I had to write the ingredients on the box for the police so they know what was in them and I've been asked what portions I put in them from the fire and rescue team which I will not divulge. They will have to use trial and error themselves.
“I've been making the cookies for a long time now and don't use a recipe anymore, I just know how much of everything I need to use.”
Mrs Gillespie's intentions were simply to show police her appreciation however, the 20 year resident of Tocumwal may have started a trend.
“I have already had some of my friends reach out on Facebook and tell me they're going to take down some Mars slice and other things and I hope this encourages more people to do so too.
“Giving them the cookies wasn't a big deal, I just wanted them to know they are appreciated by members of Tocumwal and give them a little bit of happiness.”
