One of the busiest areas of the new-look Country Club Hotel is the kitchen, and it’s any wonder with the delicious meals prepared and served by head chef Henderson Patu and his team.
Henderson, better known as Hendo, is originally from Auckland and made the move to Australia in 2011.
After originally settling in Sydney, he moved his family to Jerilderie in 2014.
Hendo has always loved food and caters for events such as the Murrumbidgee Council Sir John Monash annual dinner.
‘‘Jerilderie is a great place with lovely people,’’ Hendo said.
‘‘It’s a very welcoming community and I just love the historical value throughout the town.’’
Hendo’s delicious food can now be enjoyed on a more regular basis at the Country Club Hotel, and he’s now working on a new winter menu for the cooler months.
He says it will be a ‘‘hearty-style’’ dining experience.
‘‘The trick is not being too complicated,’’ he said.
‘‘I’m looking forward to the challenge and using the opportunity to show off my passion.
‘‘The staff who work with me in the kitchen are great, so that helps.’’
Hotel manager Rick Shaw said he and wife Deb are happy to have welcomed Hendo to the team.
‘‘Hendo is well regarded throughout the community as he’s done a lot of catering over the years.
‘‘We chatted back in October last year and we had a similar vision (for the hotel and its dining experience).
‘‘Hendo doesn’t want to be a cook, he wants to show off his talent as a chef.’’
